This is a twist on a spicy Margarita: it's light, super fresh, and a touch spicy. Little Mercies uses waste produce from the local greengrocers that would otherwise be thrown away, to make a herbal, vegetal spirit that adds a hit of flavour to this drink. Redistilling mixed herbs, like Basil, Lovage and Tarragon, with green veg like Bell Peppers, Chillis, and Cucumbers gives an amazing depth to this drink. They then take the leftover lime juice, and turn it into a cordial with sugar and lactic acid, giving it new life and a softer lime flavour that brings a lovely citrus note, but without dominating.

Made with mixed herb vodka, Volcan Blanco Tequila and soft lime.
