This has been on the Little Mercies classic cocktail menu for a long time. It's a light, and citrusy gin-based cocktail that's perfect for summer sipping.The recipe takes the original idea for the drink to its extreme, while still staying true to the origins.

To make it, they first distill a Super Citrus Gin, using salt-preserved waste-citrus. To this base they then add their lactic lemon cordial, and finally two essential oils, one from Ylang Ylang and the other from May Chang, which balance out the drink's sweetness, and add layers of additional lemon flavour.

Made with Super Citrus Gin, soft lemon, Ylang Ylang and soda.
